I Can’t Believe These Are Healthy Donuts!
Y’all really went crazy for our healthy chocolate chip cookies, so we couldn’t resist creating another delicious healthy hack. Of course, we gave ourselves another ambitious goal, and for this hack we’re tackling the dangerously decadent donut. That’s right, keep reading for your new favorite (and not totally bad for you) breakfast indulgence.
Your first thought at seeing a mini donut at 130 calories a pop might be, how exactly are these healthy? Well, we're not saying these are the healthiest breakfast option ever, but they are definitely a healthier take on your cup of coffee's best friend. In this recipe, we substitute all purpose flour for spelt and garbanzo bean flour, which increases the fiber to keep you fuller longer. We also substituted egg whites for whole eggs, reduced the sugar and butter, and then baked the donuts instead of frying them. All in all, a better, more health-conscious donut.
Ingredients:
Donuts (Makes 24 donuts – 130 calories each)
– 1 cup spelt flour
– 1 cup garbanzo bean flour (you can substitute more spelt flour)
– 1/2 cup sugar
– 1 1/2 teaspoons baking powder
– 1/2 teaspoon salt
– 1 cup low-fat buttermilk
– 2 egg whites
– 2 tablespoons melted butter
– 1 tablespoon vanilla extract
Glaze:
– 1 cup powdered sugar
– 1/4 cup milk
– 1 teaspoon vanilla extract
Directions:
First things first, get out your handy dandy donut maker. Don't have one? Well, you can pick one up on Amazon for $20, or you can just use a donut pan.
Start by mixing all of your dry ingredients together in a large bowl (flour through salt).
Grab a medium-sized bowl and mix your wet ingredients (buttermilk through vanilla).
Add the wet ingredients to the dry ingredients and mix until just combined.
Open up your preheated donut maker and fill the donut cavities with batter.
Let bake for 3 to 5 minutes, or until golden brown.
We piled our donuts high on a plate while they cooled. They're actually pretty darn good without the glaze as well!
Once the donuts are cool, it's time to make your glaze. Mix together the powdered sugar, milk, and vanilla.
Drizzle the glaze over each donut.
Cover each donut with rainbow sprinkles.
Then serve 'em up with some milk and coffee to round out your breakfast.
